Union Street Brewing Co.: A Hudson hotspot for local beer-lovers and the greater community
Launched in July 2023, Union Street Brewing Co. was started by co-owners and husband and wife team Paul and Emma O’Donnell. Located in an old, renovated warehouse in the heart of historic Hudson, the fully functioning brewery includes an on-site tap room where patrons can try the brewery’s 12 beers on draft.
“It took us a few years to find the perfect site where we could make craft beer as well as have a tap room, event space, and outdoor beer garden,” Emma shares. “We love beer and the community we knew we could create around beer.”
All about the Union Street experience
Union Street Brewing’s tap room is equipped with a full restaurant, serving an elevated bar menu, beer, wine, ciders, and cocktails. This provides a unique experience where you can enjoy delicious food and your favorite drink of choice in the same place that the beer is produced—all within walking distance of what downtown Hudson has to offer.

Their outdoor beer garden is beautifully landscaped, making it the perfect place for patrons to gather in warmer months. The brewery also serves as a venue space for a range of events, big or small, including charity fundraisers, wedding events, and parties.
For those who’d like to take some beer to go, Union Street Brewing sells cans so you can enjoy their tasty offerings at home, and they feature live music almost every weekend to give a stage to the Hudson Valley’s talented array of bands.
Open seven days a week, Union Street Brewing is proud to be a go-to spot for all kinds of beer-lovers who come to the area. When it comes to becoming a name in the local beer industry, Emma says, “The most rewarding thing has been becoming a staple in our community for locals interested in craft beer as well as a destination for craft beer tourism. We welcome customers from all over the country and the world.”
A community focal point
Offering a space for all sorts of community groups, including book clubs, knitting and crochet clubs, and olde time musicians, while also hosting trivia on Monday nights, Union Street Brewing is glad to provide “an oasis and a third place for our loyal customers,” according to Emma. “We have a very strong relationship with our locals and local organizations.”
The brewery supports local charities that focus on food insecurity and women’s rights, showing a true commitment to and involvement with the surrounding region. Reflecting this investment in the nearby area is important to Union Street Brewing, as all of the events they hold are not only community-focused, but they are attended mostly by local customers.
Out of everything they’ve learned throughout this process, Emma and Paul recognize that an important lesson stands out. “It’s all about the people,” Emma emphasizes. “Having great staff who are people oriented, taking care of our customers, making everyone feel welcome, and creating that third place for our locals.”
Keeping the local area vibrant, even in the cold
Union Street Brewing is proud to create new jobs in the Hudson area, while supporting local beer tourism in the Hudson Valley and helping the region “be recognized as a true food and drink destination,” as Emma puts it.
While the winter has slowed things down a bit because of the seasonal nature of Hudson, this doesn’t stop Union Street Brewing from providing the same great offerings year-round. Emma adds, too, that although they are focused on the present, plans for growth are in the works!
“We are very much interested in catering to the local population as well as tourists, so we are open 7 days a week and trying to keep the vibe alive in Hudson during the winter,” Emma explains. “We are a relatively new business, and our focus right now is on crafting exceptional beers consistently, providing an amazing customer experience, and being a hub in our community.”
