If you haven’t been, I highly recommend a visit to Rose Hill Farm in Dutchess County. It’s just off Route 9 in Red Hook. The team there has created something really special – Rose Hill is a working farm with an expansive list of hand-crafted libations featuring its fruits and offered in a taproom that is one of the most beautiful I’ve seen. There are lots of interesting wines and ciders and even beers on the tasting list, and I brought home several bottles. This weekend I’ll be enjoying Bird Bath, a pet-nat sparkling wine. It’s a blend of Petit Verdot, Cabernet Franc, and Traminette sourced from NYS wineries, bottled petillant naturel and aged 14 months prior to disgorgement. Unfined and unfiltered, it’s super-fresh and alive with its effervence, bursting with flowers and red fruit on the nose and in the glass. Their Pomquette Rouge is a blend of the same grapes whose skins are rehydrated with cryo-extracted apple water. And there’s so much more!
