Mid-July and we’re in the dog days of summer. Yikes! Hopefully you can find yourself poolside on these sweltering days, and here’s the perfect poolside refresher: a popsicle spritz! Spritzes are quite popular these days, and it’s no wonder why. They’re basically sparkling wine added to a liquor of your choice, such as Aperol or St. Germaine or Limoncello. Here’s a fun and delicious variation on that theme. Make or buy popsicles, preferably with real fruit, not just flavored sugar water (Goodpop organics are great!). In a large wine glass, pour it about half full of Prosecco. I prefer a Brut (dry) Prosecco, like Mionetto. If you want some extra umph, add just a splash of vodka. Put the popsicle upside down in the glass so the stick is your stirrer. Let the popsicle melt slowly into the Prosecco drink. Go ahead, suck on the popsicle, too, if you want. Who can resist?
