Smash Taco Burgers

Ever stumble across a recipe on social media that totally inspires you to get in the kitchen and try something new? Then BAM – next thing you know, it’s on regular rotation in your house. That’s exactly what happened with these Smash Taco Burgers. I saw something similar on Instagram and a new twist on an existing idea was created. One bite of my own version and I was hooked. They’ve officially earned a spot on my “favorite burger” list – and trust me, I don’t say that easily.

These are juicy, cheesy, crispy, slightly spicy, and a little messy (in the best way possible). Think taco meets burger, wrapped in a crisped-up flour tortilla instead of a bun. The flavor and texture combo is divine! 

This sauce … It’s creamy, tangy, a little sweet, a little spicy, and pulls the whole burger together. Here’s what you need:

Sauce

½ cup mayonnaise
1 tsp taco seasoning
1 tsp minced onion
1 heaping tsp sweet relish
Dash of Worcestershire sauce
½ tsp sriracha
1 tsp ketchup
Salt and pepper to taste

Mix it all together in a small bowl and set aside while you prep the rest. Trust me, don’t skip it and think ketchup will suffice. It won’t!

Caramelized onions

Sure, they take time, but these onions add a rich, sweet-savory depth that just makes the burger.

You’ll need:

2 large onions
2 Tbsp butter
Splash of water

Peel and slice the onions into thin half-rings. Melt the butter in a large pan over medium heat, add the onions, and stir frequently. Be patient – good caramelization takes time. 

Deglaze the pan with a splash of water once the onions start browning, and cook until they’re a deep, rich golden color. Set aside.

The smash burger

1 lb ground beef (80/20 or 85/15 works best)
6 flour tortillas (5–6” in diameter –  no corn tortillas here!)
Sliced cheddar cheese (or any cheese you love)
Caramelized onions
Sliced dill pickles
Shredded lettuce
Sliced jalapeños
Diced tomatoes
Burger sauce
Salt & pepper

Form the beef into 2.5–3 oz balls (a kitchen scale is super handy for this). 

Heat a skillet or griddle until HOT. No oil needed. Place the meatball on the hot surface, top it with a tortilla, and smash it flat with a burger press or spatula. Cook for 2–3 minutes, flip, add cheese, and let the tortilla get crispy while the cheese melts.

Remove from heat, and top with caramelized onions, burger sauce, and all your favorite fixings. We love pickles, lettuce, jalapeños, and tomatoes, but hey – get creative!

These burgers cook really fast – about 4–6 minutes total depending on heat and thickness. Did we mention that they are messy? One napkin will not suffice, trust us! You may even want to break out the wet wipes!  

Taco smash burgers are perfect for summer BBQs or super quick and easy weeknight dinners.
