SIMPLE, ELEGANT, INVITING. Since Anthony and Charlie Champalimaud completely re-did, renewed and re-invented Troutbeck, the magnificent country inn and restaurant mid way between Sharon, CT and Amenia, NY, there have been many reasons to pay the property a visit. The dining room continues to be at the top of the list, and a new chef, a new menu and a refreshingly imaginative view of farm-to-table cuisine extends the aura of magic that infuses their venue.

The menu responds to the season, paring locally sourced produce, fish and meats with sauces and dressings that are light, flavorful and create intriguing blends of flavors. A casual stroll through the Troutbeck dining room during dinner hours finds one word seeming to emanate from each group of diners.

“Fresh.”

As the menu will change with the seasons, it may be best to either call or go on-line to see what delicacies await. Not an extensive menu – for good reason – each dish is prepared with care and precision that might be challenged if there were too many choices. The vegan/vegetarian will find flavorful options just as those who enjoy imaginative preparation of lamb, beef or fish to their liking. Salads and accompaniments are not merely “window dressing.” They each have flavors that contribute to the overall experience. And, they are … as so many guests have said …”Fresh!”

A recent dinner with steelhead trout as the entrée, introduced with a flavorful salad of local fresh greens and herbs and topped off with a chocolate “explosion,” exemplified what McMackin had offered in a recent interview on COOL HUNTING. “I want the food and the service to magnify the experience of being a guest at Troutbeck,” he begins. “The food itself should be simple, elegant and inviting. It should be welcoming, and exciting without being showy. You should never get dish envy. But as you eat, you should have surprises as you go.”

Since Troutbeck is both an inn and a restaurant, it offers services seven days a week. Breakfast is served from 7:00 AM to 10:30 AM. Lunch is offered Wednesday through Saturday from 11:30AM to 2:30 PM. There’s a Sunday brunch from 10:30 AM to 2:30 PM and dinner is offered Wednesday through Sunday beginning at 5:30 PM.
